What's for Dinner?

I feel like recently I am being asked quite a bit about what I eat. Being vegetarian or vegan is not that difficult and it's not much of an adjustment, but I know that comes easy for me to say because I have been vegetarian for nearly 20 years now!
People have lots of reasons for being and becoming vegetarians, but I mostly decided to do it because of the cruelty factor with factory farming and how unnecessary I think it all is. I won't get preach-y about it, but I have decided that I will post a (work)week of menus and see what you all think.
Most importantly: Whether you are vegetarian or not, planning menus for the week makes it easy to get dinner on the table in about 1/2 an hour (which is usually my goal), the weekly menu plan also means it's easy to grocery shop and you don't have to worry about killing yourself trying to figure out what to have after you are already tired (and hungry!). Additionally, you can rest assured that you are feeding your family healthy and well balanced meals because you took the time and energy to create it in your meal plans. And all that is a peaceful-ness and joy that just doesn't come from take-out or pre-made meals (unless you did it yourself!).

Roasted Veggie Enchiladas from Eating Well

Some basic notes for you:
1. These roasted veggie enchiladas are KILLER. Not kidding. They are way low in fat and calories, don't need cheese, and totally remind me of something I would get in a restaurant. You can pretty much use whatever veggies you have on hand and they come out great. Also, I roast the veggies the night before and it comes together very quickly on a weeknight.
Brown rice is made either the night before and saved in the fridge or the week before and then frozen until the night before where I let it sit and defrost.
2. This white bean soup doesn't have a standard recipe... I generally saute a bunch of veggies, add in some tomatoes and broth, let simmer for about 1/2 and hour and then add in a can of beans (and sometimes some left over rice or chopped up pasta). The garlic bread is just rolls with vegan butter, garlic, and a little bit of minced parsley, either broiled or toasted until crispy.
3. The zucchini noodles I make with a spiralizer (or mandolin) and then saute some onions in olive oil, add in two cans of tomatoes, some spices (usually garlic, basil, and either parsley or oregano) and let it simmer until I am ready to server dinner.
4. The left over Bonanza happens weekly (lol). Sometimes, I get creative and make something with the leftovers, but usually, it's just everything pulled out of the fridge and everyone can pick out what they want of the leftovers. Really - - as long as everyone has a couple of food groups on their plates, I am happy.
5. Friday is the night I get a break from cooking - and I deserve it! kidding. But, I do give myself a break on Fridays, hence the prepared, or nearly prepared foods.
6. We usually go for dinner or order in from somewhere local on Saturdays and we always have a big pasta dinner with salad on Sundays.

I am not necessarily saying that I personally endorse this food plan in it's entirety, but if you are looking for a place to start planning healthy meals, why not start here?

Indian Dinner

Made a cool Indian style dinner this week, again from EatingWell.com - I am so impressed with this website (and shocked that I didn't discover it sooner). Everything we have had so far has been delicious - even SN has commented on how good the food is, including the recipes here - and everything is quick and easy to make. I think that most things can be made in 1/2 an hour or 40 minutes which is cool. This week, I prepped and pre-made nearly everything ahead of time (on Sunday), so dinners have been hassle free and easy during the week (ahhhh! reminds me of the way I USED to be organized with dinners and meal planning).  So the Indian-style Dinner started off with an Indian Stew (I made a few modifications - adding in zucchini and two kinds of potatoes, I have to say the fingerling potatoes worked better than the red potatoes, and extra water, used fresh tomatoes instead of canned and used regular carrots (and extras) in place of the baby carrots. We had it with brown rice and the Insalata Mista (is that Indian???) - again with a few modifications - extra Vegan mayo and soymilk with a little lemon juice instead of buttermilk. The dressing was easy - Miss M whisked it together while I got the carrots ready to throw on the top. Delicious and quick!

Baked Sweet Potatoes

Made the most delicious baked sweet potatoes last night for dinner in record time! This recipe, modified from the EatingWell.com website, is excellent, fast, and definitely something I will make again. Previously, I would make sweet potatoes and add some Earth Balance and a little bit of either maple syrup or paprika, but this recipe is just as fast and tastes better. The original recipe called for black beans and cilantro in the salsa, but I didn't have either of those, so I modified using kidney beans and omitting the cilantro completely. The recipe also called for a garnish with sour cream, but I didn't want to make a big thing of sour cream for just two potatoes so I also omitted that. It probably would have added another layer of creamy-goodness to have the sour cream, so next time, I will include it, but the potatoes are actually very good just as described below!

Baked Sweet Potatoes
"Bake" potatoes any way you like - I used the microwave (after poking the potatoes all over). While potatoes cook, in a microwave safe bowl, mix together 1/2 can of kidney beans, 1 diced tomato, 1/2 tsp. cumin, 1/2 tsp. coriander, and salt and a little bit of pepper. Microwave on high for 2 minutes. Split sweet potatoes open (once you can, they are hot) and pour the "salsa" right into or over the potatoes.

I served the potatoes with leftover macaroni salad from Sunday's dinner and some grilled squash on the side.

Macaroni Salad
1/2 box cooked and cooled whole wheat pasta in small shapes (sometimes I use penne and just cut up once cooked)
1/2 medium onion, finely diced
2 stalks of celery, diced
2 small tomatoes, diced
1/2 red bell pepper, diced, optional
1/2 diced cucumber
3 Tbs olive oil
1 Tbs dijon mustard
Vegan mayo
1 tsp. fresh diced dill weed or 1/4 tsp. dried

salt and pepper, to taste
1/2 can mashed garbanzo beans, optional

In a large bowl, mix the pasta, onion, celery, tomatoes, cucumber and red bell pepper, if using. Pour on olive oil, mayo, mustard, and spices. Mix together (I usually use a big tupperware container, put the lid on, and just shake everything up!). Add beans on top to mix in by hand later. Either serve immediately or chill and serve cold.
